Need a Salad Idea?

I have the day off today and as per my usual bad habit, I skipped breakfast .....
As most of us have heard skipping breakfast is a big no-no, and well, I'm guilty, again.

I did however make a nice healthy lunch!


Soup and a salad :)

I  love making homemade chopped salads, and you can have a field day mixing and matching different fresh ingredients that most of us have already in our refrigerators.

Today I found some chopped romaine, tomato, spring onion, Swiss cheese, and quinoa salad, and made a super simple homemade rice wine vinaigrette.



For the Salad:
1 Head of Romaine lettuce- Chopped
2 "on the vine" tomatoes- Sliced
4 tips of spring onion tips (just the whites and light green ends)- Minced
2 Slices of Swiss Cheese- Diced
2 Cups of cooked Quinoa

For the simple Vinaigrette:
1 Tablespoon of Rice Wine Vinegar
3 Tablespoons of Extra Virgin Olive Oil
1 shake of Lawrys Seasoned Salt
A few grinds of Fresh Black Pepper
(after combining these ingredients into a small bowl and quickly whisk together, or put into a salad dressing bottle and shake until it makes a nice emulsion)







The Quinoa, which is high in protein, is a very filling component of this salad.  Unfarmiliar with Quinoa?
